Nordic Shrimp Toasts | Grapefruit & Timut Pepper Food Crayon

Ingredients for 2 toasts:
- 100g cooked and peeled Nordic shrimp
- 1 tbsp mayonnaise (or Greek yogurt)
- ¼ lemon juice
- 1 slice of white bread
- ½ cup cooked peas
- 4 mint leaves, finely chopped
- 1 tsp finely chopped French shallot
- Olive oil
- Salt and pepper
Preparation:
- Toast the bread.
- Remove the crusts and cut into your desired shape.
- Mix the peas, shallot, and mint (in a coarse puree).
- Season with olive oil.
- Salt and pepper to taste.
- Mix the shrimp, mayonnaise, and lemon juice.
- Adjust the seasoning.
- Spoon the shrimp mixture onto the toast and top with the pea puree.
Serving:
Add a few shavings of Food Crayon Grapefruit Pepper Timut!
