Nordic Shrimp Toasts | Grapefruit & Timut Pepper Food Crayon

Ingredients for 2 toasts:

  • 100g cooked and peeled Nordic shrimp
  • 1 tbsp mayonnaise (or Greek yogurt)
  • ¼ lemon juice
  • 1 slice of white bread
  • ½ cup cooked peas
  • 4 mint leaves, finely chopped
  • 1 tsp finely chopped French shallot
  • Olive oil
  • Salt and pepper

Preparation:

  1. Toast the bread.
  2. Remove the crusts and cut into your desired shape.
  3. Mix the peas, shallot, and mint (in a coarse puree).
  4. Season with olive oil.
  5. Salt and pepper to taste.
  6. Mix the shrimp, mayonnaise, and lemon juice.
  7. Adjust the seasoning.
  8. Spoon the shrimp mixture onto the toast and top with the pea puree.

Serving:

Add a few shavings of Food Crayon Grapefruit Pepper Timut!
