Watermelon Gazpacho | Basil Crayon

Ingredients:

  • 3 cups of watermelon, cut into cubes
  • 1 1/2 cups of tomato
  • 1 cucumber, seeded and chopped
  • 1/2 red bell pepper, chopped
  • 2 tablespoons red onion
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • 1 teaspoon red wine vinegar
  • 2 tablespoons lemon juice
  • Salt and pepper

Preparation:

  1. Blend all the ingredients in a food processor until smooth.
  2. Season with salt and pepper to taste.
  3. Grate the Basil Crayon to add the perfect fresh kick!
